Strawberry Chia Jam
/Try this super scrumptious low-glycemic, high fiber treat in berry season (or anytime). Strawberries are rich in Vitamin C and many anti-oxidants and their juicy vibrancy is such a great welcome to summer. Spread on crackers with goat cheese or toast with almond butter for a truly splendid snack!
Ingredients
2 cups fresh strawberries (or frozen) - organic preferred - cut in half if large, stem tops removed
3 tablespoons chia seeds
1 tablespoon lemon juice
1 tablespoon maple syrup
1 tsp cinnamon
Instructions
Heat berries in a small saucepan on medium high heat for 5-7 minutes until soft and liquidy. If you prefer your jam smooth, you can press berries down with a potato masher.
Lower heat and add seeds, lemon juice, syrup and cinnamon and stir until well combined.
Turn heat off (or remove pan from burner) and let sit for 5-7 minutes.
Place in a glass or steel lidded container (like a Ball jar) in the fridge for about 30 minutes or overnight.
Enjoy on toast with almond butter or mixed with yogurt or on crackers with goat cheese. Spread keeps in a tightly lidded jar for about one week.
