Healing carrot ginger soup
/This soup manages to soothe both inflammatory and gut imbalances while perking up your taste buds. Carrots are great for your heart health and their high levels of CAROTenoids help maintain immunity and respiratory health on the inside while helping skin glow on the outside. Turmeric, cumin and ginger are soothing to the joints and belly while garlic and onion help boost pre-biotic fiber. If you are sensitive, this recipe also tastes great when omitting the garlic and onion.
Serves: 4
Ingredients
6 large or 8 small carrots, scrubbed + coarsely chopped
1 tbsp avocado oil
1 onion, chopped coarsely
4 cloves garlic, minced
1 inch ginger, grated (or 1 tsp ground)
1 tsp cumin
1 tsp turmeric
3 cups bone broth (alt: veggie broth)
1 13.5 ounce can full-fat coconut milk
Sea salt and pepper, to taste
1/2 lime
Garnish options: cilantro, parsley and/or pumpkin seeds
Instructions
Heat oil in a large saucepan or soup pot. Add onion and cook until softened.
Add carrots along with cumin + turmeric. Cook for one minute or until fragrant.
Add broth, bring to a boil and simmer, covered for about 20 minutes until carrots are soft. Add coconut milk and simmer for two minutes to integrate and warm the coconut milk.
Puree with an immersion blender or pour batches very very carefully as it will be very hot into your regular blender taking care to let steam out the top of the blender as needed. Return to pot.
Add squeeze of lime, sea salt and pepper to taste. Serve with minced parsley or cilantro and a pinch of pumpkin seeds as desired.
