Warm Brussels Sprout Salad with Hemp + Pumpkin Seeds
/If you are not a “salad” person, this warmed salad may change your mind! This salad is a detoxifying, hormone balancing, low starch side dish or main meal with added chicken or tofu.
Ingredients
- 2 cups shaved Brussels sprouts (buy shredded or slice thinly after cutting off tops) 
- 2 cups red cabbage, sliced thinly 
- 1 tbsp extra virgin olive oil 
- 2 tbsp balsamic vinegar 
- 1/2 cup hemp seeds 
- 1/2 cup pumpkin seeds 
- 1/4 cup dried tart cherries 
- 1/4 cup flat leaf parsley, chopped 
- Lemon or orange squeeze 
- Sea salt to taste 
Instructions
- Heat oil in a big skillet. Saute cabbage and sprouts until wilted. 
- Add balsamic vinegar and stir. 
- Toss with hemp seeds, pumpkin seeds, cherries, juice and sprinkle with parsley. 
- Serve immediately.
