Warm Brussels Sprout Salad with Hemp + Pumpkin Seeds
/If you are not a “salad” person, this warmed salad may change your mind! This salad is a detoxifying, hormone balancing, low starch side dish or main meal with added chicken or tofu.
Ingredients
2 cups shaved Brussels sprouts (buy shredded or slice thinly after cutting off tops)
2 cups red cabbage, sliced thinly
1 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1/2 cup hemp seeds
1/2 cup pumpkin seeds
1/4 cup dried tart cherries
1/4 cup flat leaf parsley, chopped
Lemon or orange squeeze
Sea salt to taste
Instructions
Heat oil in a big skillet. Saute cabbage and sprouts until wilted.
Add balsamic vinegar and stir.
Toss with hemp seeds, pumpkin seeds, cherries, juice and sprinkle with parsley.
Serve immediately.
