No-Bake Date–Peanut Butter Protein Bites

No-bake date and peanut butter bites with oats and collagen—an easy, make-ahead snack with 11 grams of protein and a little carbohydrate to fuel an early workout.

Makes 12

  • 10 pitted dates

  • ¼ cup peanut butter

  • ½ cup oats (50 g)

  • 120 g collagen peptides (12 scoops/servings approximately but look at your specific container)

  • Pinch of salt

  • 2–4 Tbsp water, as needed

Blend ingredients in a food processor, roll into 12 bites, and chill. (Alternately, stick the whole processor into the freezer for five minutes then roll for less messy hands)

Per bite: 145 calories, including 11 g protein, 17 g carbs, 3 g fat and 2 g fiber
