No-Bake Peppermint Cocoa Truffles

Makes: 12 rounded bites
Ingredients
1/2 cup smooth almond butter, unsweetened
2 tbsp ground flaxseed
2 tbsp cocoa powder
2 tbsp coconut flakes
1 tsp pure vanilla extract
1 tbsp maple syrup
1/2 tsp peppermint extract
OPTIONAL: mini dark chocolate chips (I used Enjoy Life for dairy-free) or extra cacao powder
Instructions
Blend ingredients in a food processor. Roll into balls. Option to roll in cacao powder, cacao nibs or mini chocolate chips.
Freeze 15-30 minutes and serve.
Store in freezer or fridge to keep fresh for weeks.
