No-Bake Peppermint Cocoa Truffles

These fiber and healthy-fat filled holiday treats will help support great digestion and happy hormones while giving you that fudgy, low-glycemic indulgence you were looking for!

Makes: 12 rounded bites

Ingredients

  • 1/2 cup smooth almond butter, unsweetened

  • 2 tbsp ground flaxseed

  • 2 tbsp cocoa powder

  • 2 tbsp coconut flakes

  • 1 tsp pure vanilla extract

  • 1 tbsp maple syrup

  • 1/2 tsp peppermint extract

  • OPTIONAL: mini dark chocolate chips (I used Enjoy Life for dairy-free) or extra cacao powder

Instructions

  1. Blend ingredients in a food processor. Roll into balls. Option to roll in cacao powder, cacao nibs or mini chocolate chips.

  2. Freeze 15-30 minutes and serve.

  3. Store in freezer or fridge to keep fresh for weeks.
