Detoxifying Cauliflower Kale Soup

Ingredients
2 tbsp extra virgin olive oil
1 onion (diced)
2 stalks celery (diced)
2 carrot (medium, diced)
4 garlic (cloves, minced)
1 small head cauliflower (chopped into florets)
4 cups kale leaves (chopped)
1 tsp fresh rosemary (alt: dried)
6 cups vegetable broth (I like Brodo seaweed mushroom broth (frozen) or Kettle + Fire premium vegetable broth (boxed))
2 cups lentils (cooked)
1 tsp sea Salt & black pepper (to taste)
2 tbsps lemon juice (Juice from a whole lemon)
Instructions
Heat the olive oil in a large pot. Add the onion, celery, and carrots. Cook for about 10 minutes, or until veggies are softened. Add the garlic and rosemary and cook for 2-3 more minutes.
Add the cauliflower, kale, and vegetable broth. Bring to a boil then reduce heat to a simmer. Let simmer for 20 minutes.
Stir in the cooked lentils and season to taste with sea salt and black pepper. Add lemon juice. Divide between bowls. Enjoy!
Notes: Feel free to make this soup SUPER easy by using frozen veggies + precooked legumes.
Make Less Starchy/Higher Protein: To make less starchy, swap in frozen organic shelled edamame for the lentils.
