Herby Kale Pesto
/Serves: 8-10
Ingredients
- 2 cup kale 
- 1 cup parsley 
- 1 cup basil (or cilantro) 
- 1 cup pepitas (pumpkin seeds) 
- 1/4 cup nutritional yeast 
- 2 cloves garlic, peeled and chopped 
- Juice from half lemon 
- 2 tablespoons olive oil, to drizzle in slowly 
- 1 teaspoon sea salt 
- 1/2 cup water (Add slowly as needed to thin) 
Instructions
- Blend all ingredients in a high speed blender or food processor, adding the olive oil and water just enough to thin but not too thin! 
- Serve immediately or store in an airtight container in the fridge and keep in mind that it will thicken as it sits.
