Fall cabbage slaw
/Cruciferous veggies like cabbage and kale are the stars of this crunchy simple salad with just a bite of sweetness. Adding in high-fiber brassicas can help prevent cancer, balance estrogen and support detoxification essential for women’s health especially in midlife.
Ingredients:
1 cup green or napa cabbage, sliced thin
1 cup kale, torn into bite size pieces
1 cup red cabbage, sliced thin
1 green apple, cored, sliced thin (option to peel)
1/4 cup tahini
1 tbsp raw apple cider vinegar
2 tbsp water
1 tsp ginger, grated
Juice from 1/2 lime, squeezed
1 tsp maple syrup
Pinch of sea salt to taste
Instructions:
Mix cabbages and kale gently in a bowl.
Toss in apple slices.
Whisk together tahini, vinegar, water, ginger, lime juice.
Drizzle over slaw and toss. Allow to sit for 15-30 minutes before serving.
