Salmon Cobb Salad

This protein-rich, magnesium-filled salad is an excellent lunch pick-me-up that will restore your energy and help you calm and focus your mind for a productive afternoon.

Ingredients

Salad

  • One 6 oz. can wild-caught salmon, drained and separated

  • 2 hard-boiled eggs, chopped

  • 2 slices pastured turkey bacon, chopped (optional)

  • 1 cup cucumber, chopped and peeled

  • 1 avocado, peeled, pitted, chopped

  • 1 cup chopped cherry tomatoes

  • 1/4 cup pumpkin seeds

  • 1 cup chopped celery

  • ½ cup chopped radishes

  • 4 cups fresh baby spinach

Dressing

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 2 teaspoons grainy mustard

  • Salt and pepper to taste

Instructions

1. In a large bowl, mix together salad ingredients.
2. Whisk together dressing ingredients. Pour over the salad and toss gently to coat.
3. Serve immediately.
