Salmon Cobb Salad
/This protein-rich, magnesium-filled salad is an excellent lunch pick-me-up that will restore your energy and help you calm and focus your mind for a productive afternoon.
Ingredients
Salad
One 6 oz. can wild-caught salmon, drained and separated
2 hard-boiled eggs, chopped
2 slices pastured turkey bacon, chopped (optional)
1 cup cucumber, chopped and peeled
1 avocado, peeled, pitted, chopped
1 cup chopped cherry tomatoes
1/4 cup pumpkin seeds
1 cup chopped celery
½ cup chopped radishes
4 cups fresh baby spinach
Dressing
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
2 teaspoons grainy mustard
Salt and pepper to taste
Instructions
1. In a large bowl, mix together salad ingredients.
2. Whisk together dressing ingredients. Pour over the salad and toss gently to coat.
3. Serve immediately.
