Rich and Creamy Maple Mustard Dressing

If I have one go-to dip for late fall/early winter, it’s this one! It’s grounding and smooth and a bit spicy with a hint of sweet. The ingredients are gut-friendly and easy for folks with food sensitivities. Tahini is an excellent source of fiber while the ginger and apple cider vinegar can activate those digestive juices. I love it as a veggie dip or with roasted veggies, cut-up pears or apples or add a little water and it becomes a salad dressing!

Ingredients

  • 1/2 cup extra-virgin olive oil

  • 1/4 cup apple cider vinegar

  • 1/4 cup tahini

  • 2 tbsp. maple syrup

  • 2 tbsp. Dijon mustard

  • 3 tsp. fresh grated ginger (1 1/2 tsp ground)

  • 1 tsp sea salt

Instructions

Blend together until smooth. Store in the refrigerator for up to one week.
