Cold Tomato Miso Soup

Super refreshing and easy this Cold Tomato Miso Soup is a digestive powerhouse! Rich in probiotics, this makes a tangy afternoon snack or light side dish.

Serves: 2

Ingredients

  • 2 large, ripe tomatoes (Jersey preferred!)

  • 1 tablespoon organic miso paste (I like Eden Foods’ Organic Shiro Miso)

  • 2 tablespoons naturally fermented, raw kimchi or sauerkraut (try a local brand like Hawthorne Valley)

  • 1 handful fresh basil leaves

  • 1 cup cold water

  • 1 tablespoon nutritional yeast (optional) - like Bragg’s

Instructions

Blend together in a Vitamix of high-powered blender and enjoy!
