Cilantro Pesto

Serves: 8-10

Ingredients

  • 1 cup cilantro

  • 2 cup arugula

  • 1 cup parsley

  • 1 cup pepitas (pumpkin seeds)

  • 1/4 cup nutritional yeast

  • 2 cloves garlic, peeled and chopped

  • Juice from half lemon

  • 2 tablespoons olive oil, to drizzle in slowly

  • 1 teaspoon sea salt

  • 1/2 cup water (Add slowly as needed to thin)

Instructions

  1. Blend all ingredients in a high speed blender or food processor, adding the olive oil and water just enough to thin but not too thin!

  2. Serve immediately or store in an airtight container in the fridge and keep in mind that it will thicken as it sits.
